Meet the Chef
Chef Jean Gabriel Rodríguez was born in San Juan, Puerto Rico. His culinary journey began with extensive travels through Japan and Asia, where he immersed himself in diverse cultures, experiencing an abundance of ingredients and cuisines that would forever shape his culinary perspective. This foundation of cultural exploration led him to train at the Escuela de Hostelería de Sevilla in Andalucía, Spain, where he refined his craft across Michelin-starred kitchens in Bilbao, San Sebastián, Benicarlo, and Sevilla.
Back on the island, he joined Marmalade Wine Bar in Old San Juan under Chef Peter Schintler, shaping a philosophy where innovation is grounded in respect for ingredients and heritage.
At Yuquibo Cocina Ancestral, Chef Jean Gabriel brings that vision home: ancestral wisdom + modern technique, elevated through a fine-dining lens and rooted in the living spirit of El Yunque. Each plate is composed like a story—subtle, soulful, and deeply connected to the land.
